This week I would like to introduce a Moroccan inspired SoMeat Chicken Lemon Couscous. It is a very light but fulfilling dish. It perfectly balances sweet and sour taste. Lemons are very beneficial to our health, they help controlling weight, improve digestion and reduce cancer risk. However it is quite difficult to incorporate them into the diet. So this dish can be a perfect solution. Let’s start spring in health and shape!

SoMeat Chicken Lemon Couscous

Serves 2 people

Ingredients

SoMeat - Kara-Age (Fried “Chicken”) 6 pieces
Couscous 120ml
Small Zucchini 1
Green Beans 10
Hachijo Fruit Lemon (or lemon) 1
 - Lemon Juice 60ml
 - Lemon Zest half a teaspoon

Dice the zucchini and halve the green beans. Fry them over a low heat for about 10 min, covered.

Zest the lemon and squeeze 60ml of lemon juice.

In a pot roast the couscous and then add 60ml of lemon juice and 60ml of water. Let if fully absorb the liquid. Then add cut into 6th dates and mix all together.

Add the SoMeat to the zucchini and green beans. Warm all together for about 2 min.

Serve the lemon couscous with the SoMeat. Sprinkle with lemon zest.
