In June we have many baby vegetables. I really like this month, as everything is so fresh and rich in both taste and vitamins. So this week, I would like to introduce a SoMeat Grilled – Baby Eggplant Salad. This plate of pure vitamins is so delicious and uses hardly any spices! Let’s try!

SoMeat Grilled – Baby Eggplant Salad

Ingredients

SoMeat Aburiyaki 100g
Baby Eggplant 6
Zucchini Blossom 2
Pine Nuts 15g
Pesto 2 teaspoons
Tomato 1
Fresh Basil optional

Recipe

First, prepare the SoMeat Aburiyaki following the instructions. And cut into small, bite-size pieces.

Halve one zucchini blossom (lengthwise), slice the second and grill for about 5 min.

In a pan, fry grilled baby eggplants and sliced zucchini, over a low heat with pine nuts.

Finally, add pesto and SoMeat to 4. And mix all well. Turn off the heat. Serve with grilled tomato slices and fresh basil.
