The rainy season is over and temperatures are rising. It is too hot to eat during the day, so we tend to consume a little too much at night – which is never good for the weight. Therefore, this week, we recommend a very easy and light – SoMeat Rice Noodle Salad with Saffron-. Saffron is a powerful antioxidant that is said to have cancer-fighting properties. And best of all, it adds a unique flavor and vivid crimson color to this summer dish.
SoMeat Rice Noodle Salad with Saffron
Serves 3-4 people
time： 10- 15 min
Start by preparing the SoMeat. Defrost overnight in the fridge.
Cook the noodles until tender (2-3 min) and strain.
Add the cooked rice noodles to a frying pan ( I recommend a wok) and start adding sesame dressing while stirring.
Turn on a small heat and heat for about 1 min.
Add soybean sprouts and stir – fry for about 2 min, or until the sprouts become softer. Then turn off the heat.
Over a low heat, warm everything until all the ingredients get a little warmer.
* It can be served at room temperature or warm.
