This week I would like to introduce a variation of Polish Potato Pancakes – SoMeat Vegetable Mushroom Potato Pancake. It is easy and very delicious dish. With Fall coming soon, we can find more and more mushrooms. Mushrooms are considered as a superfood, they help prevent heart disease, cancer and diabetes. Let’s try Polish cuisine and stay healthy!
At the beginning prepare the SoMeat following the instructions. And cut into smaller ( bite size) peaces.
Heat olive oil in the bottom of a frying pan.
Drop about 2-3 tablespoons of potato mix onto the heated olive oil. And flatten it to make a pancake.
Transfer chopped zucchini, bell pepper and mushrooms to the frying pan. Fry for about 3 min, using oil if needed.
Add fresh rosemary and 100ml of water to the vegetables. Cover and keep cooking for about 5 min, until soften.
