This week I would like to introduce a variation of Polish Potato Pancakes – SoMeat Vegetable Mushroom Potato Pancake. It is easy and very delicious dish. With Fall coming soon, we can find more and more mushrooms. Mushrooms are considered as a superfood, they help prevent heart disease, cancer and diabetes. Let’s try Polish cuisine and stay healthy!

SoMeat Vegetable Mushroom Potato Pancake

Wash zucchini, bell pepper and mushrooms. And chop them coarsely.

Add fresh rosemary and 100ml of water to the vegetables. Cover and keep cooking for about 5 min, until soften.
